Watermelon radish falafel, La Ratte potatoes (fried potato skins and potato balls confit), melted creme fraiche split with dill oil, sliced watermelon radish marinated in dill oil, garnished with some broccoli flowers.
Radish Falafel
800g peeled watermelon radish
200g AP flour
4 cloves garlic
1 medium onion
black pepper
3 tsp baking soda
cayenne
coriander
I started with these amounts but then adjusted somewhat, so this is not exactly what I ended up with. Slice watermelon radish then process radish, garlic, onion, and spices in food processor until well-minced. Continue processing until radish is releasing some of its water. Add flour and baking soda and process to form very loose dough. Add salt to taste. Scoop out onto floured sheet. Manipulating dough as little as possible, form balls/discs, and deep fry at 325F until cooked through.
