My old immersion blender has finally broken in an unfixable way. I don't recommend that product. For one thing, it was way overpriced, but the main drawback is that the design of the blade and blade housing prevented the blender from foaming liquids well. Anyway, it's done now, and I need a new immersion blender.

I use an immersion blender mostly for shearing hydrocolloids into liquids, foaming liquids, and emulsifying things. I rarely use it for pureeing, since they just don't do a very good job of pureeing (compared to a decent blender).

Should I go with a cheap consumer version, like this Cuisinart or this Kitchen-Aid (which is recommended by Cooks Illustrated)? A cordless immersion blender would be awesome, but I couldn't ever rely on it being charged at the moment I wanted it, so that's out.

Should I go with a professional model? If so, what brand? Waring makes a light duty model which is priced well, but at 100-watts seems like it might be too low-power (my Viking consumer model was 300-watt, and most consumer models are 200-watt). The next model up is significantly larger, and at 350 watts would definitely be adequately powered.

What about pro models by Robot Coupe, Dynamic, and Electrolux? Anyone have any experience with any of these, and can you recommend specific (small) models?

I don't like to buy half-assed appliances but when it came to an immersion blender, I couldn't find a way to spend MORE money. They all seem to suck. However, it looks like you managed to find some "pro" models. The only one I have ever seen was at the restaurant where they had a giant one you could put in large stock pots. It seems a little overkill. Let's be real, what a pro home cook needs is one that's roughly the same size as the Cuisinart or Kitchen-Aid with a better motor and better construction. I don't think that exists.

Well, I've had a Braun 400watt one for almost six years now. And I've gone thru a kitchenaid along the way. I love my Braun. There's also a nice Hamilton Beach somewere that looks right for heavy duty use and it's got a removable stick.

It turns out that Cooks Illustrated just came out with a review of some immersion blenders. Though the only arguably professional model they had in the running was the Waring Light Duty, it's still a pretty good read. They completely pan the Waring, and some of the reasons are relevant to me. They also dislike the Cuisinart and a cordless model. They like the Kitchen-Aid (their previous winner), but their top rated blender was also the one with the lowest price: Kalorik Sunny Morning Stick Blender. Currently $14 on Amazon! At that price, I have to at least give it a shot.

If it doesn't work out, I think I'll try a Braun. Thanks, guys.

I've also been looking for one, and I seem to remember that Ruhlman hypes the Braun. Let us know what you think of the Kalorik. I find Cook's Illustrated annoyingly unique in their testing of equipment/reagents, but I have this conspiracy-like theory that they a priori pan the most expensive options. This leads to a juicy headline, something to the effect of, "$10 xxx outperforms $500 pro-version." I haven't done a quantitative study, but having subscribed for a little over a year, I definitely perceive that to be a consistent pattern ...

Cook's Illustrated is also consistently unable to evaluate products on durability grounds due to the length of their tests (often they take place in a single day of use).

And, yes, they do seem to have a big problem with spending money on cooking equipment, consistently making cost a huge part of the value proposition.

Ikea has a $2 whisk blender, perfect for foaming and emulsifying liquids. Not good for solids as it is weak, however, this tool is cheap and works well. Pain in the arse to get the aa batteries in, though.

Help help. I was using my beloved Braun model 4189 immersion blender with the chopping bowl yesterday and after 10 years of flawless service I pushed it over the edge and broke the upper part/gear box by trying to chop ten too many mejool dates at one time for a Christmas treat. Now I can't find a replacement anywhere. Does anyone know where I could get one? Braun doesn't make them anyone and I am just sick about it. Anyone have one that went with their Braun blender that perhaps doesn't work anymore (their blender itself not working I mean-- my blender still works perfectly-- it's the upper of the chopping bowl which broke)? Help. I would pay of course. I love that old blender, darn it.
