First I served a miniature turkey pot pie. Just large enough for one bite, each one had some small dice of carrot, celery, and turkey breast, and the filling, instead of being a bland bechamel, was intensely roast-poultry-tasting.

These were pretty good, with one of my helpers, Aimee, being entirely responsible for the extremely tender, flaky crusts (which were based a buttermilk crust from Shirley Corriher's book Bakewise). They were made a little hastily on the afternoon of the dinner, and I think I could have tweaked the consistency of the filling a bit for a better result, but they were still quite delicious.

If you don't have Bakewise, by the way, I highly recommend it.

I turned to Bakewise to figure out why my cookies were so soft and I really did not like the way it was laid out. In the cookie section, she would present a bunch of recipies and say things like "With these, you'll learn that sugar makes things sweet and heat is needed to bake cookies." (exaggeration). I just wanted her to have headings like "Cookies too soft? Do this" or "Here's the role fats play in cookies."

I am sure all the info is there but I don't like how it was presented. It's like I had to be a detective to put it altogether.

I love Bakewise, but it works best if used in one of two ways: either bake a specific recipe, or else read an entire section (e.g. the cookie section, or the cake section) from start to finish. If you do the latter, you'll learn all about that particular type of baked good, and you'll fully understand what is happening with your cookies and how to fix it. But no, Bakewise doesn't work well for specific troubleshooting, though that would be a good section for her to add in subsequent additions.
