I've cooked at Mission Street Food a couple times now when they've needed an extra person in the kitchen. Anthony (chef) and Emma (sous) are really cool and invited me to put a couple dishes on the menu this Saturday. They're going with a breakfast for dinner theme for the whole menu. Here are my two dishes:

  • Pork Belly and a Coffee Donut with Powdered Lemon Sugar, Whipped Maple, Banana and Brown Butter Puree, Lemon Zest, Cinnamon Basil

  • Bendable Chocolate Milk with Orange Juice Sherbet, Orange and Cocoa Krispies Streusel, Fresh Orange, and Chocolate Oil

I did a test plating of the pork belly dish, which is pictured in this post. It turned out pretty well, but I wasn't happy with how deconstructed it looked on the plate. It's gonna get plated much more organically at MSF, out of necessity as well as aesthetics. The chocolate dish is going to be Alinea's pliable chocolate ganache, which has nearly been done to death, but it will be new to most of MSF's diners, so it's still worth doing.
