I recently posted pretty much "http://www.eatfoo.com/archives/2009/08/peas_and_carrots.php">the same peas and carrots course, only this time I didn't include the gratuitous cheese or herbage. It was intended as an homage to canned peas and carrots with pearl onions. In fact, it was on the menu as "CANNED PEAS AND CARROTS | Onion Foam," and I'd intended to serve it in cans. Unfortunately, the only thing we could come up with for suitable cans were tuna cans, and I felt that they were too sharp on the inside rim to serve without grinding them to smooth them. I ran out of time and didn't get to grind them.
Otherwise, this course was delicious. The onion foam packs so much flavor and luscious mouthfeel. Yum. I am loving this Northern California climate and the fact that we STILL have awesome fresh peas!
The peas were from Iacopi Farm, the carrots are Heirloom Organic Gardens, the onions were from Chue's Farm. The onion foam also had salt, cream, and soy lecithin to stabilize the foam.
