DUNGENESS CRAB
Cantaloupe Water | Coriander Berries, Fresh and Refreshed | Lime | Olive Oil | Tangerine Marigold
This was the second amuse to go out. Guests got a nice, big chunk of dungeness crab, with a bit of cantaloupe water, a drizzle of olive oil, a squeeze of lime, two kinds of coriander berries, and a tangerine marigold flower (which has a vague citrus taste, but let's be honest: it was just a garnish).
Most of the coriander berries were fresh, purchased from the surly guy with the esoteric herbs (White Crane Springs Ranch) at the Ferry Plaza Farmer's Market. Some of them were dried coriander berries that I pressure cooked for 45 minutes in a simple syrup but with white vinegar replacing the water. The cantaloupe water was simply cantaloupe flesh from two kinds of cantaloupe from the farmer's market, blended then strained. The dungeness crab was live from San Francisco Fish Company, steamed until done, then shocked, and the meat picked out.
This was pretty tasty, though it definitely could have used a bit less cantaloupe water in order to let the crab shine through a bit more.
