  • Buttermilk-fried duck confit, with Trisol in the batter, as described in the previous post.
  • Buttermilk biscuits, pulled into chunks.
  • Olallieberries. They're similar to blackberries, but if you care to know their exact lineage, there is a chart on the olallieberry Wikipedia page.
  • Olallieberry jam.
  • Broccoli Rabe, sauteed with some butter, finished with a bit of buttermilk, and lots of salt.
  • Radish.
  • Chervil.
  • Puree of fresh peas. This did not taste good with the other flavors. Everything else was delicious, and this was just weird with it. I should have known, but I thought it might work. It didn't.

What is it with olallieberries this year? I seem to see things written about them everywhere, and yet I only saw them once at Monterey Market. You aren't going down and picking them are you? I got introduced to them through Scott Beatie's Artisanal Cocktails book from his time at Cyrus. And where are you getting this fresh chervil? Please tell me you have a place in the city. Well, I guess Andronico's has it, but I don't care for going there, and despite my constant pestering at bi-rite, they seem determined not to carry it. Although, that one guy with all the herbs has it down at the ferry building has it as well. Well, just stumbled across your blog today. The partner was insistent about getting a vacuum sealer and secretly bought one yesterday, and I figured I would see what other people were doing with them, and here I run across someone using one in my own neighborhood! It's kind of amusing that you are also a lawyer. It looks like you are doing some interesting stuff and have been reading the same cookbooks that I have. Also loved the post about your time staging at Nopa. I love monotonous tasks as well, but peeling garlic without crushing it is odious. Any tricks?

Chris, I love my vacuum sealer. I got the GameSaver Turbo. Other people have mentioned having less-than-stellar experiences, but I've had no problems whatsoever.

I was getting the olallieberries from Yerena Farms (at the Ferry Building Farmer's Market on Saturdays, Tuesdays, and Thursdays). The chervil was from one of the vendors at the Thursday market. I cannot remember the name, but it's one that sets up on the front-left of the building on Thursdays.

Peeling garlic without crushing: break up the heads of garlic, then soak all the cloves overnight in cold water. Then they'll peel much easier.
