Recipe: Spinat Torte

I first had this particular recipe at my ex-boyfriend's mom's house last summer on the 4th of July. It's similar to a pizza, but with some unique and somewhat healthier attributes. The bonus is that it is incredibly simple to make. We made it again the other day, so I took pictures this time.

Recipe Title

Serves 6 people. Cooking time: 1 hour.

The ingredients:

  • 1 package of frozen puff pastry (you will use both sheets)
  • 40 oz. frozen spinach
  • 4-6 tomatoes (thinly sliced to cover torte)
  • 1/2 large onion (chopped)
  • salt and nutmeg (just a bit...)
  • bit of freshly grated parmesan cheese
  • cheese (enough to slice and cover torte)

The algorithm:
Preheat oven to 350. Thaw the frozen spinach and cook in oil with onion in a pan. Throw in a bit of salt and nutmeg (just a bit so that it doesn't overpower the dish) and a bit of grated parmesan. Place sheets of puff pastry onto a pizza pan. One square will cover the center and the other should be cut into triangles to go over the edge of the pan (see pictures below). Spread the spinach and onion mixture onto the pastry, then layer tomato slices on top. Slices of cheese will go on top of the tomato slices (many types of cheese will work - for the one show below three different cheeses were used). Fold over the pastry edges and bake for 30 minutes or until browned.

Oh, but... pizza is not hard! I usually buy pre-made pizza dough from an Italian deli (pizza places will usually sell you dough if you want it, too). Then you just slather on some sauce, some toppings, and some slices of buffalo mozzarella, pop it into the oven until it's melty, and you're done.

Making your own dough is considerably harder, but still do-able. If you were to make your own puff pastry dough, that would be worse than making your own pizza dough.

Oh, I wasn't meaning that it was easier than pizza or that pizza was tough, but that this (too) is pretty simple. I have a pizza stone and throw stuff on pre-made pizza dough frequently. This is simply an alternative...

Wow, that looks pretty amazing, I think I'll have to give it a try as well, but with a mozzarella or a provolone.
